When you read the ingredients, this will sound absolutely horrible, but the first time I made it, it became an instant family classic.


2 Cans Pineapple Tidbits - partial drained

1 Cup Sugar

6 Tbs Flour

2 Cups grated cheddar cheese (mild or sharp)

1-2 stacks Ritz crackers crushed (I prefer 2, but opinions vary)

1 Stick Butter - Melted (1 stick = 1/2 Cup)


Mix the pineapple, sugar, flour, and cheese together, and pour into a casserole dish. Set aside. In a bowl, mix the Ritz crackers and butter together. Stir until completely moistened, adding more butter if necessary. Spoon the cracker mixture on top of the pineapple mixture.

Bake at 350 for 30 minutes.

Best served warm. Will make about 10 servings.

My Wife and I made this and it was perfect, except the next one we make could use a little less than one cup of sugar.
